- 1. Peel the zucchini and then grate the zucchini up like you would cheese. Set it aside.
- 2. Preheat your oven to 350 degrees. Grease 9x4 loaf pans. Set it aside.
- 3. Mix your flour, sugar, baking soda, and cinnamon together in a bowl. Set it aside.
- 4. In another bowl, mix eggs, vegetable oil, and vanilla. Set it aside.
- 5. Add your zucchini to your flour mixture. Make sure that all the zucchinis are coated in the flour mixture.
- 6. Now add your wet ingredients to your dry ingredients. Mix.
- 7. Once your mixture is all mixed up, put all your choice of nuts in your bowl. DO NOT over mix. Mix just until the ingredients are fully mixed together.
- 8. Divide your batter up into the different pans equally. Bake for about 50-60 minutes OR until a toothpick is inserted, and it comes out clean. The loaves are done!
- 9. Let cool in the pans for about 5-10 minutes. Then take them out of the pan and let them cool down on a wire rack!
