INSANELY EASY FRIED RICE 


INGREDIENTS
* 3 cloves garlic
*2 medium scallions
* 2 tablespoons plus 1 teaspoon vegetable oil, divided
*1 cup frozen peas and carrots (do not thaw)
*4 cups cold cooked brown or white rice (see Recipe Notes), preferably medium grain -MUST USE LEFTOVER RICE OR IT'LL COME OUT TOO MOIST!!!!! 
* 1 tablespoon soy sauce or tamari
* 1 1/2 teaspoons kosher salt, plus more as needed
*3/4 teaspoon ground pepper, plus more as needed
* 2 large eggs
* 3/4 teaspoon toasted sesame oil

INSTRUCTIONS
1. Mince 3 garlic cloves. Thinly slice 2 medium scallions crosswise on a slight diagonal, keeping the white parts separate from the light and dark green parts.
2. Heat 2 tablespoons of the vegetable oil in a large wok or nonstick frying pan over medium-high heat until shimmering. Add the garlic, scallion whites, and 1 cup frozen peas and carrots. Stir-fry until the carrots and peas are thawed, about 2 minutes.
3. Add 4 cups cold cooked rice, breaking up any clumps of rice with your fingers as you add it in. Toss to combine with the peas and carrots. Add 1 tablespoon soy sauce, 1 1/2 teaspoons kosher salt, and 3/4 teaspoon ground white pepper. Stir to combine.
4. Push the fried rice to one side of the pan. Add the remaining 1 teaspoon vegetable oil to the now-empty side of the pan, then crack 2 large eggs into the oil. Scramble into fluffy curds until almost set.
5. Turn off the heat and stir the eggs into the fried rice, breaking up any large pieces of egg. Drizzle with 3/4 teaspoon toasted sesame oil and toss to combine. Taste and season with more kosher salt and white pepper as needed. Garnish with the reserved scallion greens.

RECIPE NOTES
*Rice: Cook 1 1/3 cups raw white or brown rice to get 4 cups cooked rice.
*Make ahead: Cook the rice up to 1 day ahead. Spread it out on a rimmed baking sheet in a thin layer, then refrigerate. 
Storage: Fried rice can be refrigerated in an airtight container for up to 4 days or frozen for up to 2 months.

this was VERY good but I could not duplicate this one. I made this sauce for shrimp pasta but made too much so used it on the cabbage. ill come up w a better recipe soon 😉

beet and carrot soup

3 medium beets

1 cup onion

1 tablespoon oil

1Ib carrots

3 large garlic clove.

1 tablespoon minced fresh ginger

6 cups stock

1 teaspoon grated orange peel

3/4 teaspoon salt & pepper

4 teaspoons sour cream (optional)

DIRECTIONS

1. Peel beets and cut into chunks. put onto pan and roast for 20 to 25 mins. until crispy 

2. bring 1/2 cup of broth to a boil. add your roasted veggies cook for 10 mins on simmer. 

3. Add ginger, garlic, and orange peel.

4. Add stock or water.

5. Slow boil for about 50 minute or until veg are soft.

6. Puree

7. Add salt and pepper.

8. Serve with sour cream,

For the marinade:
*8-10 hard-boiled or soft boiled eggs, peeled
*1½ cup soy sauce
*1/2 cup water
*4 tablespoons rice wine vinegar
*1 tablespoon sesame oil
*3 cloves garlic, grated or finely minced
*1 teaspoon fresh ginger, grated
*1 tablespoon chili oil (add more if you want a spicier kick)

Optional Garnish:
*More chili oil
*Some reserved marinade
*Green onion, finely sliced
*Toasted sesame seeds 

Directions: mix all ingredients and add your hard boiled peeled eggs! Let sit overnight! Enjoy!

Ingredients
*2 medium bananas
*PB Banang Bars
*1 1/2 cups rolled oats
*1/2 cup creamy peanut butter
*1/4 cup honey
*2 tablespoons milk (dairy or non-dairy)
*2 teaspoons ground cinnamon
*1/2 teaspoon baking powder
*1/4 teaspoon salt

Prep: Preheat oven to 375F. Line an 8×8 baking pan with parchment paper. Mash bananas.

Mix: Add the rolled oats (1 1/2 cups), peanut butter (1/2 cup), honey (1/4 cup), milk (2 tablespoons), cinnamon (2 teaspoons), baking powder (1/2 teaspoon), and salt (1/4 teaspoon) to the bowl with the bananas. Mix well until evenly dispersed.

Mix: Add the rolled oats (1 1/2 cups), peanut butter (1/2 cup), honey (1/4 cup), milk (2 tablespoons), cinnamon (2 teaspoons), baking powder (1/2 teaspoon), and salt (1/4 teaspoon) to the bowl with the bananas. Mix well until evenly dispersed.

Serve & store: Let the bars cool for 5-10 minutes, then remove from the pan using the parchment paper. Place on a cutting board and let cool for a few more minutes, then use a sharp knife to cut into 8 bars. Drizzle with melted peanut butter if you want. Keep these bars stored on the counter or in the fridge in an airtight container or individually wrapped, for up to 5 days.

They may start to get stale around day 4, but they are still good to eat if you want.

easy gluten-free blueberry lemon bars 

2 tablespoon lemon 
1 teaspoon lemon zest 
1 cup peanut butter 
1/4 cup syrup 
1 cup blueberries 
1 teaspoon baking soda 
1/8 teaspoon salt 

combine all ingredients except blueberries. mix well. fold in blueberries cook at 350 for 15 to 25 mins.

I also noticed that both my grandmother and I did not have a truly horrible diet, but we both did not feel very good. I was so overweight and unhappy. So I transformed my diet. I educated myself about food. I gained valuable knowledge about food. I now use food to power my weight loss journey, transform my daughter’s health, and help my family take control of their lives! This is not a diet page. These are all recipes that are TOTALLY healthy for you! You can eat all these recipes and feel good about it! It is all real food! Food does not have to be complicated! Dehydrated applesauce is the best to have on hand. Dehydrated applesauce is the best to have on hand. It is a quick pick-me-up that will give you the energy to power through your day! I absolutely love to put this into my car’s emergency bag! It lasts for months and if you have hot water, you can rehydrate it back into applesauce. I keep this in my emergency bag in the car during the winter months, because if I break down and cannot get help, I have food that I know I can rely on! You can use my recipe for applesauce, or you can just buy some already made from the grocery store. When picking an applesauce, you need to make sure that the sugar content is EXTREMELY low! Apples have a lot of natural sugar, so you do not want to ingest too much extra sugar so that you do not incite hunger even more. Our bodies can use sugar as fuel and in doing so we need to make sure that in an emergency, you do not use all the applesauce as energy immediately leaving our bellies even hungrier! This needs to be able to last for hours in the event of an emergency! This is such a good choice and so easy to make! I have heard about so many more people than normal I have heard about so many more people than normal have gone homeless lately so I decided to go and try to give back! I wanted food that would be easy to pass out, easy to make, high vegetable/fruit content, hydrating, stick with you type of food, and such as Zucchini Bread! This was a winner for so many reasons. SO I cooked and I cooked until I had almost one hundred loaves of bread that I cut it into chunks. I wanted to give them something bigger than one slice so I made it into about 3 slices equaled one of my slices. 

 NOW I was off after making so many loaves of bread! I went to the area that I had heard so many people on Facebook had gripped about the homeless people in this area. When I got there THERE WAS LITERALLY NO ONE AROUND!!! To make a long story short... I spoke to several people in the area that told me that it was NOT homelessness issue, but in fact a drug issue. I was shocked. Everyone that I spoke with had a home or a place to stay; BUT some of them were clearly hooked on drugs and could not even sit still. 

 I wish people were a lot more honest, because if I had known that this was a drug issue and not a homelessness issue then I would have NEVER brought my daughter with me. I thought this was a good learning opportunity for her to see how rough life can really be. One gentleman even told me that there were three men that just got arrested for making a 14 year old girl prostitute!!

 I wish the city would have been totally honest about what had been going on in downtown Ypsilanti. I would have not baked bread for people that did not exist. So then I tried to contact a homeless shelter since I had so much bread, AND they told me that since it was not bought from a store that they could not accept it!!! I did not know that the homeless could afford to be that picky, but you learn something new everyday! 

 I did eventually find a homeless shelter to drop it off at. I did not call them and I just showed up so they could see that I was a "normal" person.
