white chicken chili soup
Ingredients

2 Cups Shredded Chicken, or Turkey

1 tablespoon Olive Oil, or avocado oil

1 Sweet Onion, diced

1 Red Bell Pepper, Chopped

3 Garlic Cloves, minced

15 ounces Diced Tomatoes, stewed tomatoes, or tomato sauce, but one can

3 Cups Chicken or Turkey Broth

2 (15oz) Can navy beans 

1 teaspoon Chili Powder

1 teaspoon Ground Cumin

1 teaspoon Dried Oregano

1/2 teaspoon Chili Flakes

Sea salt and pepper, to taste

optional ingredients

1 1/2 Cup Frozen Sweet Corn (or 15 oz can), rinsed and drained 
jalapeño 


OPTIONAL TOPPINGS:

Shredded cheese, avocado, tortilla chips, cilantro, sour cream, greek yogurt, sliced jalapeno etc.


Instructions

1. Heat 1 tablespoon Olive Oil in a pot over medium-high heat. Add 1 Sweet Onion (diced) sautee til translucent. add 1 Red Bell Pepper and the 2 cans of rinsed beans. Cook for 4 to 5 mins.
add garlic.   
2. add chicken broth, can of tomato, and seasonings. bring to a boil then simmer for about 30 minutes so the flavors come together. 
3. add your additional toppings. I added sour cream, cilantro, green onion, jalapeños, some spicy chips, and a splash of hot sauce.

Easy tortilla soup 

INGREDIENTS 
*1-2 cups chicken diced up into small bite sized pieces 
*28oz crushed tomatoes 
*4 cups of chicken broth 
* 1 tablespoons each- cumin, pepper, chili powder 
*1 can corn drained and rinsed 
*1 can black beans drained and rinsed
* 1 medium onion cut up 
*1-2 jalapeños (optional)
*2 minced garlic cloves 

DIRECTIONS 
1. cut everything up. rinse and drain everything 
2. sautée onion, jalapeño, and garlic on the stove over medium heat. 
3. once your veggies are sautéed, add your tomatoes and chicken broth. 
4. add your corn, black beans, and chicken. 
5. let it cook for a few minutes then its done! 

optional 
I added cheese, sour cream, and lemon before I served it. you can also add tortilla chips for a crunch!

INGREDIENTS 
*1/2 cup flour mixed with 4 tablespoons garlic, 4 tablespoons French onion soup mix, 1 tablespoons pepper, and anything else you'd enjoy BUT the total amount of flour with seasonings is half a cup TOTAL! 
*1/2 cup butter
*4 cups chicken broth 

DIRECTIONS 
1. in a pan on the stove over medium heat, melt butter. Once the butter is bubblings, add the flour and seasoning mixture. combine and stir constantly while cooking for 60 seconds. 
2. After 60 seconds add the chicken broth slowly, mix until well combined. continue to simmer for 15 minutes or until thick. 
3. THAT'S IT! my take on lower fat, chicken soup that does not give you heat burn or indigestion pizza sauce for breakfast pizza 🤔 hmm.. what to call it? 

I make this and freeze it so its ready when I make pizzas!

Potato soup
Ingredients 

*8 potatoes 
*8 cups of chicken broth 
*1/2 cup flour mixed with 2 tablespoons Italian seasoning and 4 tablespoons French onion soup mix. 
*2 cups half&half 
*1 cup carrot
*1 1/4 celery 
*1 large onion 
*2 garlic cloves 
*4 tablespoons butter 
*1 tablespoons butter 

DIRECTIONS 
Cut all your ingredients up! Then
Melt one tablespoon of butter over medium heat. Once hot, sautée your onions and celery for about 5 minutes until translucent, then add your carrots. Cook for 2-3  minutes. Add your potatoes, mix, and cook for 4 minutes. Add 8 cups of chicken broth.  Stir. Bring to a boil then reduce to a simmer and cover w a lid. 

Meanwhile make your cream sauce...

In a separate pan melt 4 tablespoons of butter. Once the butter is  bubbling, add the flour mixture. Combine and cook for 60 seconds stiring constantly. After 60 second,  slowly add your half and half. Stir until combined. Cook for about 5 minutes. When it thickens up its done. Set to the side. 

Meanwhile back to the potato soup...

Once your potatoes are fork tender, remove half of the pot to a bowl or blender. Either blend or immersion blend the half of soup you  removed. Once creamy add it back to the soup. Stir then add your cream mixture and stir again. IT IS DONE!

This potato soup is the best! It requires more work than my normal potato soup done in the pressure cooker but tastes so darn good!!! Worth the extra effort and makes so much soup!!

Amish Amoxicillin 

1 large purple onion
1 lemon (the entire thing)
1 cup pineapple 
1  inch ginger 
1  inch turmeric 
1 tablespoon cayenne pepper 
2/3 cup apple cider vinegar 
1 teaspoon black pepper 

DIRECTIONS 
clean everything. remove the pineapple skin and cut into chunks. you can leave the core just remove the skin. cut up ginger, turmeric, onion, and lemon. put the vegetables into the blender. blend until smooth. remove from blender. remove the pulp with a cheesecloth or mesh strainer. once you have the liquid removed from the pulp, add your cayenne pepper, apple cider vinegar, and black pepper . take twice a day for infections or gut bacteria reset!

Leftover ham bone soup/ split peas soup 

*1 leftover ham bone
*1 cup onion 
*1 1/4 cup celery 
*1 cup carrot
*1 tablespoons butter 
*16 ounces split peas 
*8 cups of chicken or vegetable broth 

Directions 
1. Heat butter in skillet over medium heat. Once the butter bubbles, add your onions and celery. 
2. Cook till translucent about 5 mins. Add carrots and continue to cook for 2 minutes. 
3. Transfer to your cock pot. 
4. In your crock pot add your rinsed split peas,  chicken or vegetable broth, and your ham bone. 
5. Cook on high for several hours! I cooked mine for 6 and a half hours. 
6. DO NOT SKIP THIS STEP! remove the ham bone. Let the soup cool and refrigerat overnight. In the morning remove from fridge. There will be a layer of fat that you should remove off the top of the soup. 
7. Enjoy! 

This is not a soup you can make the same day. You MUST remember to remove all that fat.. unless you enjoy really fat foods. Up to you!

I also noticed that both my grandmother and I did not have a truly horrible diet, but we both did not feel very good. I was so overweight and unhappy. So I transformed my diet. Dehydrated applesauce is the best to have on hand. Dehydrated applesauce is the best to have on hand. It is a quick pick-me-up that will give you the energy to power through your day! I absolutely love to put this into my car’s emergency bag! It lasts for months and if you have hot water, you can rehydrate it back into applesauce. I keep this in my emergency bag in the car during the winter months, because if I break down and cannot get help, I have food that I know I can rely on! You can use my recipe for applesauce, or you can just buy some already made from the grocery store. When picking an applesauce, you need to make sure that the sugar content is EXTREMELY low! Apples have a lot of natural sugar, so you do not want to ingest too much extra sugar so that you do not incite hunger even more. Our bodies can use sugar as fuel and in doing so we need to make sure that in an emergency, you do not use all the applesauce as energy immediately leaving our bellies even hungrier! This needs to be able to last for hours in the event of an emergency! This is such a good choice and so easy to make! I have heard about so many more people than normal I have heard about so many more people than normal have gone homeless lately so I decided to go and try to give back! I wanted food that would be easy to pass out, easy to make, high vegetable/fruit content, hydrating, stick with you type of food, and such as Zucchini Bread! This was a winner for so many reasons. SO I cooked and I cooked until I had almost one hundred loaves of bread that I cut it into chunks. I wanted to give them something bigger than one slice so I made it into about 3 slices equaled one of my slices. 

 NOW I was off after making so many loaves of bread! I went to the area that I had heard so many people on Facebook had gripped about the homeless people in this area. When I got there THERE WAS LITERALLY NO ONE AROUND!!! To make a long story short... I spoke to several people in the area that told me that it was NOT homelessness issue, but in fact a drug issue. I was shocked. Everyone that I spoke with had a home or a place to stay; BUT some of them were clearly hooked on drugs and could not even sit still. 

 I wish people were a lot more honest, because if I had known that this was a drug issue and not a homelessness issue then I would have NEVER brought my daughter with me. I thought this was a good learning opportunity for her to see how rough life can really be. One gentleman even told me that there were three men that just got arrested for making a 14 year old girl prostitute!!

 I wish the city would have been totally honest about what had been going on in downtown Ypsilanti. I would have not baked bread for people that did not exist. So then I tried to contact a homeless shelter since I had so much bread, AND they told me that since it was not bought from a store that they could not accept it!!! I did not know that the homeless could afford to be that picky, but you learn something new everyday! 

 I did eventually find a homeless shelter to drop it off at. I did not call them and I just showed up so they could see that I was a "normal" person.
