Twice Baked Smash Potatoes
These twice baked smashed potatoes are so good for your health! We turn normal starches into resistant starches! The resistant starches ferment in your large intestines and colon which feds your bacteria in your gut, strengthening your immune system. They help keep you fuller longer, feeding fiber to your colon to protect yourself from colon cancer!

Ingredients
-
5-6
red potatoes
(any waxy potato will work for this)
-
1/4
cup
shreeded cheese
-
2-3
tbsp
oil
-
3/4
tbsp
seasoning
(you can use any seasoning you like!)
Instructions
-
Preheat oven to 350. Clean your potatoes and put into a baking dish. You do not really have to season or anything. Just cook until they are fork-tender. It will take about 30 mins. When you can stick a fork into the potato easily then it is done!
-
Once the potatoes are fully cooked, let them cool down completely. This is changing the starches from starches to resistant starches. This is so good for you!
-
Once they are halfway cooled down, cut in half. Lay them out on your baking dish. Use the bottom of a glass to smash the potatoes flat. You will not get them completely flat but close. Continue to let cool down.
-
Preheat oven to 350. Once potatoes are cooled down, lightly drizzle in oil and add your favorite seasoning. Cook until light golden brown. It is usually 25-30 mins. They will be a crispy seasoned prebiotic fry that not only taste good but is so good for you!
-
Add cheese to the top as they are cooling for ten minutes. The cheese will melt and the potato will stay crispy! I hope you give these a try!
Recipe Notes
If you want to make this but make it very lazy, I got you! Cook the potatoes the night before. When you are ready to make dinner simply smash, add seasoning and cook! SET IT AND FORGET IT!! Both times are minimal effort and so easy! You can put it in the oven then walk away, remove, then enjoy!
