PICKLED PURPLE ONION
Purple onions are good for your health! They help clear the lungs, so I knew I wanted to eat more of them. I tried to pickle them and absolutely LOVE them! Here is the recipe, I hope you try it! It is another easy one!

Ingredients

medium purple onions

water

white vinegar

garlic cloves

raw organic sugar
Instructions

Cut up your onions into thin uniform pieces. I used a mandolin to cut them thin! You can just also cut them up by hand. It may just take longer to pickle. CUT the garlic up into smaller pieces too. Once they are cut up divide the onions between two jars! top with garlic and add the peppercorns.

combine the water, vinegar, and sugar. Heat on the stovetop on medium heat for a few minutes. Heat the mixture until the sugar disappears. It takes less than 5 minutes.

Once the sugar is dissolved, let it cool down! Do not mix the liquid and onions together when it is warm, because it will make the onions soggy!

Once the liquid is at room temp, split it in half. Pour the liquid over the onions, garlic and peppercorn. Put into the fridge. If your onions are really thin, it can be as soon as an hour, and it is done. HOWEFVER, it takes 48 hours to really marinate so the longer it sits the better! ENJOY
